How to Use a Steel
- Hold the steel firmly in your hand with the guard positioned to stop the blade in case it slips.
- Hold the knife in your other hand and place on top part of steel.
- Raise back of blade 1/4 inch. Maintain this angle and constant pressure as you draw the blade across and down the length of the steel.
- Perform this in one continuous motion with the blade tip completing the stroke, passing off the steel near the guard.
- Repeat the same action under the steel for the other side of the blade. Always maintain the same pressure and angle on both sides of the steel.
- Repeat five or six times.
